Walnut Cheese Patties with Brown Sauce

To grind the walnuts, use a spice mill or coffee grinder. You could also place the nuts in a heavy paper bag and break them down with a rolling pin. This is a lean and high protein dish. Walnut Cheese Patties with Brown Sauce

Makes 7-8 patties.

Ingredients:

Patties:

  • 1 1/2 c whole wheat bread crumbs, finely ground
  • 1/2 c walnuts, finely ground
  • 3/4 c Parmesan cheese, grated
  • 6 Tbsp half ‘n half or whole milk
  • 1 large egg, slightly beaten
  • 1/4 tsp salt
  • 1 tsp rubbed sage
  • 2-3 Tbsp vegetable oil

Brown Sauce:

  • 1 Tbsp beef style vegetarian seasoning and broth mix (McKay’s or similar)
  • 1 c water
  • 2 Tbsp margarine or butter
  • 2 Tbsp all purpose flour
  • 1/8 tsp salt
  • 1/8 tsp coarsely ground black pepper

Directions:

  1. Mix the bread crumbs, walnuts, cheese, half ‘n half, egg, salt and sage in a medium bowl.
  2. Form into 7 patties with hands or an oiled mini burger press.
  3. Heat the oil in a large skillet over medium low.
  4. Brown the patties for about 3-4 minutes per side.
  5. Drain on paper towels.
  6. In a spouted small bowl, combine the broth mix with the water and blend well.
  7. Melt the margarine in a small saucepan over medium low heat.
  8. Add the flour and blend well.
  9. Using a wire whisk, stir constantly while gradually adding the broth mixture.
  10. When thick, stir in the salt and pepper and simmer one minute.
  11. Pour into gravy boat or on top of the patter of patties.
