Use this lightly sweet dressing on fruit salads or green salads, such as my Swiss Chard Salad. It makes an everyday salad taste special.
Makes about 1/3 cup.
- 2 Tbsp apricot preserves or jam
- 1 Tbsp red wine vinegar
- 2 Tbsp olive oil
- 1/8 tsp dry marjoram leaves
- 1/4 tsp sea salt
- 1/8 tsp black pepper
- Place all ingredients in a blender and process until smooth and creamy.
- Serve on green or fruit salads. Place unused portion in tightly sealed container and refrigerate for up to 4 days.
