Mandarin Cucumber Salad
California Mandarin oranges taste like very sweet little tangerines ... but without the seeds! I love them, especially in this wonderful salad!
- 1 large cucumber
- 6 California mandarin oranges
- 1/2 brown onion
- 1 Tbsp olive oil
- 1/4 c white wine vinegar
- (1) .035 oz packet stevia or 2 tsp sugar
- 1/4 tsp aniseed
- 1/2 tsp sea salt
Peel and thinly slice the cucumber. Peel and section the mandarin oranges. Thinly slice the onion and cut the rings in half.
Add the cucumbers, mandarin oranges and onions to a large bowl and toss.
In a small bowl or jar, whisk together the remaining ingredients. Pour over the salad and toss.
Serve at once, or for best results, chill one hour before serving.
