Farm Style Pasta Salad

Farm Style Pasta Salad This is a low calorie way to make pasta salad, with plenty of vegetables, no added oils, and high protein cottage cheese. It’s creamy and delicious too.

Serves 4-5

Ingredients:

  • 1 c uncooked ziti pasta
  • 1 large carrot, peeled, thinly sliced
  • 1 c frozen peas
  • 2 plum tomatoes, de-seeded, chopped
  • 1 1/2 c cottage cheese
  • 1 Tbsp fresh parsley, minced
  • 1 green onion, thinly sliced
  • 1/2 tsp dried dill
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp dried basil
  • 1/4 tsp salt
  • 1/4 tsp pepper

Directions:

  1. Boil about 3 cups lightly salted water. Drop in the ziti, carrots, and frozen peas; bring back to boil. Stir, and reduce heat slightly. Cook about 7 minutes, or until just tender. Rinse under cold water, drain thoroughly.
  2. In a large bowl, mix the tomatoes, cottage cheese, parsley, green onion, dill, garlic powder, onion powder, basil, salt and pepper well.
  3. Fold in the ziti, carrots and peas and mix well. Refrigerate until well chilled for best taste.
