Scottish Thistle Shortbread Pans

Recently, I was lucky enough to find a great little Scottish thistle shortbread pan in our local thrift shop. Shortbread recipes go back to medieval times, when bakers would have leftover dough from making bread. They would place it in a slow oven to harden. Eventually, yeast was omitted from the bread recipe and replaced by butter and sugar, forming the Scottish delight known as “shortbread”.
