Horseradish Veggie Meatloaf

With a can of Cedar Lake Meatless Patty Mix and a few common ingredients, you can make this vegetarian meatloaf in record time. For a special occasion, oiled and finely cut potatoes, carrots, parsnips, and/or onions may be roasted alongside this loaf.Horseradish Veggie Meatloaf

Makes one medium loaf.

Ingredients:

  • 2 medium carrots
  • 1 large onion
  • 1 – 4.5 oz canCedar Lake Meatless Beef Patty Mix
  • 2 Tbsp canola oil
  • 1 Tbsp horseradish
  • 1/4 tsp caraway seeds
  • 1/4 tsp cayenne
  • 2 eggs, lightly beaten
  • 1-2 Tbsp ketchup

Directions:

  1. Grate the carrots on a box grater or in a food processor until minced. Mince the onion. (This may be done in a food processor as well.) Place these veggies in a large bowl with the dry Patty Mix, and stir well. (Do not follow directions on the can or add water. The carrots and eggs will add the moisture needed.)
  2. Add the oil, horseradish, caraway seed, cayenne and beaten eggs. Blend well and allow to stand 10 minutes or so, while preheating the oven to 375 degrees F.
  3. In the center of a baking sheet or baking pan, grease the area where you will form the loaf. Mound the loaf mixture there and shape it into a rectangular or oval loaf. Squeeze or spoon the ketchup over the top. Bake 40 minutes. Serve hot.
