Low Calorie Apple Cobbler

Stevia is an all-natural sweetener which we like to use in combination with other sweeteners. We happen to have the powdered variety in packet form, and used (3) one-gram (.035 oz) packets in this recipe, or a total of 1/4 teaspoon of the powdered product. If you have the liquid stevia, use 6-9 drops. This recipe is not only low in sugar, but has no fat, other than the small amount in the low-fat baking mix. One generous serving of this dessert is about 200 calories (without whipped topping).Low Calorie Apple Cobbler

Makes 10 servings.

Ingredients:

  • 8-10 baking apples
  • 1/4 tsp stevia powder
  • 1 tsp cinnamon
  • 1/4 tsp sea salt
  • 1 1/2 c low fat vegetarian baking mix (such as Heart Smart Bisquick)
  • 1/2 c brown sugar
  • 1 c quick oats
  • 1 tsp vanilla
  • 1 c orange juice

Directions:

  1. Preheat oven to 375 dgrees F.
  2. Peel and core the apples. Cut them in thin slices and place them in a large bowl.
  3. Sprinkle with the stevia, cinnamon and salt. Mix very well and spread evenly in the bottom of a 13 x 9 x 2 inch baking dish.
  4. In the same large bowl, mix the remaining ingredients until well-blended.
  5. Pour evenly over the apples. Use the back of a spoon to further spread it around. (The batter may not cover all the apples, but it will fill in as it bakes.)
  6. Bake 40 minutes or until the top is golden brown.
  7. Allow to stand 10 minutes before cutting into 10 servings.
  8. Serve warm or cold.
