Green Tomato Berry Pie

I just finished reading In Praise of Tomatoes by Steve Shepherd. It’s a wonderful memoir and he has a recipe for Green Tomato Pie in there, but here is my version. I’ve added berries to the green tomatoes…with wonderful results! Green Tomato Berry Pie

Makes one large pie.

Ingredients:

  • 16 oz frozen mixed berries
  • 2 medium green tomatoes, chopped
  • 3/4 c sugar
  • 2 Tbsp all purpose flour
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ginger
  • 1/8 tsp cloves
  • 1/8 tsp salt
  • 1 Tbsp butter or margarine
  • pastry for a 2-crust pie

Directions:

  1. Preheat oven to 375 degrees F and get out a 9.5 inch pie pan.
  2. In a large bowl, mix the frozen berries (no need to thaw), green tomatoes, sugar, flour, cinnamon, nutmeg, ginger, cloves and salt. Blend well.
  3. Roll out your pie dough and place the bottom crust in the pan. Pour in the filling and dot with butter. Top with the other round of pastry. Flute edges and cut out air vents.
  4. Place on baking sheet to catch leaks. Bake for 50 minutes or until you see the filling bubble through the vents. Cool before serving
