Vegetarian Cheeseburger Casserole

Serves 4-6.

Ingredients:

Casserole:

  1. 2 Tbsp butter
  2. 2 Tbsp flour
  3. 1 1/2 c low fat or whole dairy milk
  4. 1 c diced American cheese
  5. 1/4 c Parmesan cheese, grated
  6. 1/4 c onion, minced
  7. 1 Tbsp ketchup
  8. 1 tsp prepared mustard
  9. 3/4 tsp salt
  10. 1/4 tsp freshly ground pepper
  11. 6 ounces (1 1/2 c) dry macaroni, cooked according to package directions and drained
  12. 2 MorningStar Farms original Grillers (1/2 box) or use Meal Starter Griller Crumbles

Topping:

  • 2 Tbsp butter
  • 2 slices of white bread, broken into crumbs
  • 1/4 c shredded cheddar cheese

Directions:

  1. Preheat the oven to 350 degrees F. Butter an 8 x 8 inch baking dish.
  2. Melt the butter in a 2-quart saucepan over medium heat. Stir in the flour and cook, whisking for 1 minute. Remove from the heat and whisk in the milk. Cook and whisk over medium heat, stirring until the sauce bubbles around the edges and thickens. Add the American cheese, onions, ketchup, mustard, salt, and pepper. Stir until the cheese is melted. Fold in the cooked macaroni and remove from the heat. Spoon into the prepared baking dish.
  3. Lightly brown the burger patties on both sides in a lightly greased skillet. Cut the patties into bite-sized pieces and place on top of the casserole. Press down slightly to partially submerge the burger bits.
  4. For the topping, melt the butter. Stir in the bread crumbs and the cheddar cheese. Sprinkle evenly over top. Bake for 25 minutes or until bubbly and lightly browned on top.
