Sweet Pea Omelet

Frozen peas can add a lovely and nutritious dimension to a simple omelet. Try this for a quick supper entree or for a special breakfast treat.Sweet Pea Omelet

Serves 2.

Ingredients:

  • 1/4 c water
  • 1 Tbsp olive oil
  • 1/4 tsp savory or rosemary
  • 1/8 tsp salt
  • dash black pepper
  • 1 c frozen peas
  • 4 large eggs
  • 1 Tbsp Parmesan cheese, grated

Directions:

  1. In a large skillet, heat the water, olive oil, savory, salt and pepper on medium low.
  2. Add the frozen peas and cook 4 minutes, stirring once or twice.
  3. In a medium bowl, beat the eggs with the Parmesan cheese, using a fork or whisk until smooth.
  4. Pour evenly into the skillet. (The skillet will have a bit of liquid in the bottom.)
  5. Mix the eggs into the liquid remaining in the skillet with a fork, giving it a few light stirs.
  6. Cover the skillet and cook 3 minutes, or until set on the bottom and nearly cooked on the top.
  7. Loosen the edges of the omelet and turn half over the other half. (This will allow the omelet to continue cooking in the center.)
  8. Slide onto a serving plate and serve with country fried potatoes.
