Fig Walnut Banana Bread

Serves 6.

Ingredients:

  • 1 c all purpose flour
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 tsp ginger
  • 1/4 tsp allspice
  • 1/8 tsp nutmeg
  • 1/4 tsp salt
  • 1/4 c miller’s bran (wheat bran)
  • 1/2 c sugar
  • 1/4 c margarine
  • 1 egg, lightly beaten
  • 1 tsp orange zest
  • 1/4 c orange juice
  • 3/4 c ripe banana, mashed
  • 1/2 c walnuts, chopped
  • 8 dry figs, minced

Directions:

  1. Preheat the oven to 350 degrees F. and grease an 8 x 4 x 2 inch loaf pan.
  2. Into a large mixing bowl, sift together the flour, baking soda, baking powder, cinnamon, ginger, allspice, nutmeg, and salt.
  3. Blend in the bran.
  4. In a small mixing bowl, cream the sugar and margarine.
  5. Add the egg, orange zest, and orange juice.
  6. Fold in the figs and walnuts.
  7. Spread in the prepared loaf pan, not going higher than 2/3 full.
  8. Bake about 55 minutes, or until a toothpick inserted in the center comes out clean.
