Irish Hand Pies

Irish Hand Pies Here is my easy vegetarian version of Irish pasties or hand pies. I used my recipe for Vegetarian Corned Beef, but any firm seitan will do. A perfect St. Paddy’s Day treat!

Makes about 8 hand pies.

Ingredients:

  • 1/2 c vegetarian corned beef or any firm seitan
  • 1/2 c potato, peeled and cut in small dice
  • 1/2 c carrot, peeled and cut in small dice
  • 1/2 c frozen peas
  • 1 c water
  • 1 Tbsp vegan butter
  • 1 Tbsp all purpose flour
  • 1 tsp vegan Worcestershire sauce
  • 1/4 tsp dry dill
  • 1/8 tsp onion powder
  • 1/8 tsp garlic powder
  • dash salt (optional)
  • 8 discs Goya Tapa Empanada Dough, thawed
  • 1 Tbsp vegetable oil

Directions:

  1. Finely dice the vegetarian corned beef or seitan. Place it in a small skillet or saucepan.
  2. Add the finely diced potato and carrot, the peas and water. Place over medium heat and bring to boil. Reduce heat and simmer uncovered 5 minutes, or until just tender.
  3. Drain the skillet mixture, reserving cooking liquid plus enough water to make 3/4 cups liquid.
  4. In the same skillet, melt the vegan butter and add flour. Whisk constantly until it becomes a smooth paste.
  5. Stir in the Worcestershire sauce. Add reserved liquid/water and whisk until it simmers one minute and is very thick. Remove from heat and stir in the dill, onion powder, garlic powder and salt.
  6. Add the vegetable/seitan mixture to the thick sauce; stir well and set aside.
  7. Lightly flour a clean work surface and flour your rolling pin. Roll a pastry disc until it is thin and 6 inches in diameter. Dip your finger in water and run it around the edges of the pastry.
  8. Place 1/4 cup of the filling in the center. Fold one side over the other and press edges together, forming semi-circles. Repeat with remaining pastry discs and filling.
  9. Using the flat tines of a fork, press all joined edges of the hand pies together to seal completely. Prick air holes in the tops. Place on a large baking sheet that has been lined with parchment paper. Brush tops with the oil. (At this point, the hand pies should be refrigerated at least 15 minutes, or until ready to bake.)
  10. Preheat oven to 350 degrees F.
  11. Bake 15-20 minutes, or until browned and cooked through. Serve hot or at room temperature.
