Ratatouille is a French Proven├žal stew, full of delicious vegetables from the garden. This version actually tastes better when the spices have a day to blend.

                Serves 4.
Chayotes provide a toothsome texture in these crepes. This dish can be made the day before and reheated. It will even taste better on the second day!
                 Serves 6.
The old stand-by recipe for baked apples and butternut squash is spiced with mace and it's delicious, but I wanted to try something a little different for a change. The mandarin oranges add a new dimension to the dish, and the cardamom-ginger spice fits just right.
          Serves 4-6.
